Curiosidades gastronómicas: imaginario y realidad (I)

Muchas son las historias sobre el origen y diversificación de los alimentos en el mundo, y las costumbres asociadas a su producción y consumo. Algunas entretejen realidades y leyendas, en las que se vislumbran hechos corroborados y fantasía desbordante; otras, parecen encontrar posiciones conciliadoras, sustentadas en investigaciones antropológicas que integran ciencia y saberes populares. Lo cierto es que resultan divertidas, instructivas y novedosas, para confirmar el carácter multidimensional de lo trófico.

Leonardo Da Vinci
Se le atribuyen muchos inventos en el campo de la gastronomía. Cuentan que para evitar la extraña costumbre de la época, de limpiarse las manos con grasa sobre pieles de conejo, ideó que cada comensal dispusiera de un paño a modo de servilleta para esos menesteres. También propuso agregar otro diente al tenedor de mesa, diseñó un asador automático y creó una máquina para hacer espaguetis.

Macedonia de frutas
Resulta una especie de coctel, aderezado con azúcar, licor o zumo. El nombre con el que se ha bautizado gastronómicamente a esta preparación, proviene de Macedonia, región histórica del sureste de Europa, en el que alternaron diversas razas y culturas. Por extensión, el término macedonia se ha aplicado para referirse a un conjunto de elementos heterogéneos. Actualmente, la macedonia de frutas forma parte de la gastronomía de muchos países del mundo, como España, Francia, Italia y Latinoamérica.

Café
El árbol del café tiene su centro de origen en la lejana Abisinia, que en la geografía actual es Etiopía, en el oriente de África. Una leyenda muy comentada y difundida sobre el origen de esta bebida es la de un pastor de Abisinia, llamado Kaldi, que observó el efecto tonificante de unos pequeños frutos rojos de un arbusto desconocido, en las cabras que lo habían consumido en los montes. Kaldi llevó unas muestras de hojas y de frutos a un monasterio cercano, donde los monjes idearon esta milenaria bebida.

Cacao y chocolate
Cuentan que Hernán Cortés bebió el exquisito brebaje a base de cacao, en un vaso de oro. En aquella ocasión, debió ingerirlo acompañado con maíz molido, pimienta y otras especias, e inclusive, hierbas afrodisiacas naturales, según la manera de consumo de los aztecas. Así, llamó la atención a los conquistadores de que la bebida era muy energética y daba fuerzas para realizar una marcha sin necesidad de ingerir otros alimentos. Por otra parte, los aztecas utilizaban las almendras de cacao como moneda de pago.

Pastas alimenticias
La historia de que Marco Polo volvió de China trayendo a Italia la receta de los espaguetis es uno de los mitos más arraigados en la literatura gastronómica. Sin embargo, muchos historiadores afirman que esta historia podría ser errónea. Es conocido que los griegos, romanos y árabes ya conocían un tipo de pasta, similar a los espaguetis, inclusive antes de nuestra era. Por otra parte, se dice que los chinos ya elaboraban la pasta 2 000 años antes que los italianos. Lo cierto es que lograr las finas hebras de fideos y espaguetis requería de prensas poderosas y máquinas de extrusión, que no se inventaron hasta la mitad del siglo XIX. Al parecer el origen de la pasta pudo ser «simultáneo» en diferentes sitios y civilizaciones.

Cerveza
Los orígenes de la cerveza datan desde hace más de 4 000 años; su uso fue reportado por los sumerios que tomaban esta bebida, y la denominaban sikaru. Sin duda, ellos transmitieron esta costumbre al milenario Egipto, en el que su consumo era monopolio exclusivo del Estado. En los papiros médicos figuran hasta 19 variedades de cerveza, y se ha encontrado en las tumbas egipcias el proceso detallado de su fabricación. Otras culturas y civilizaciones fabricaban la cerveza a base de arroz, mijo, maíz, jengibre, sorgo y yuca, mientras que en Europa se mantuvo la cebada como ingrediente base.

Quesos
Se atribuye el origen del queso desde la domesticación del ganado hace unos diez mil años. Se cree que la leche conservada en recipientes de piel o piedra se acidificaba y al desprenderse el suero quedaba una pasta que al cuajar abrió el camino a este alimento. En escritos de los sumerios, hacia el 3000 antes de nuestra era, se señalaban cerca de 20 quesos blandos. Homero cita en su Odisea que cuando Ulises y sus seguidores se ocultaron en la caverna del cíclope Polifemo, vieron que este ordeñaba a sus ovejas y preparaba una especie de queso, a partir de la leche cuajada.

Sal
Tiene una larga historia, pues se ha demostrado que los primeros asentamientos humanos se producían en los lugares en que había agua y este producto. También se conoce que en los primeros años de Roma, cada soldado recibía diariamente su paga en sal, lo que dio origen al término de salario. Los cocineros de la antigüedad iniciaron la costumbre de mezclar la sal con otras especias, como pimienta, jengibre, comino, apio, azafrán, perejil y eneldo; y en la actualidad algunos alimentos como el pescado se cocinan al horno, envueltos en una gruesa costra de sal.

Some interweave realities and legends, in which corroborated facts and overflowing fantasy are glimpsed; Others seem to find conciliatory positions, supported by anthropological research that integrates science and popular knowledge. The truth is that they are fun, instructive and novel, to confirm the multidimensional nature of the trophic.

Many inventions are attributed to it in the field of gastronomy. They say that to avoid the strange custom of the time, to clean their hands with grease on rabbit skins, he devised that each diner had a cloth as a napkin for these purposes. He also proposed adding another tooth to the table fork, designed an automatic rotisserie, and created a machine for making spaghetti.

Macedonia (Fruit salad)
It is a kind of cocktail, seasoned with sugar, liquor or juice. The name by which this preparation has been gastronomically named comes from Macedonia, a historical region in southeastern Europe, where various races and cultures alternated. By extension, the term Macedonian has been applied to refer to a set of heterogeneous elements. Currently, fruit salad is part of the gastronomy of many countries in the world, such as Spain, France, Italy and Latin America.

Coffee
The coffee tree has its center of origin in the distant Abyssinia, which in today's geography is Ethiopia, in eastern Africa. A widely commented and spread legend about the origin of this drink is that of an Abyssinian shepherd named Kaldi, who observed the toning effect of small red berries from an unknown bush on the goats that had consumed it in the mountains. Kaldi took samples of leaves and fruit to a nearby monastery, where the monks devised this ancient drink.

Cocoa and chocolate
They say that Hernán Cortés drank the exquisite concoction based on cocoa, in a golden glass. On that occasion, he must have eaten it accompanied with ground corn, pepper and other spices, and even natural aphrodisiac herbs, according to the way the Aztecs consumed it. Thus, he called the conquerors' attention to the fact that the drink was very energetic and gave strength to carry out a march without having to eat other foods. On the other hand, the Aztecs used cocoa beans as payment currency.

Pasta
The story that Marco Polo returned from China bringing the recipe for spaghetti to Italy is one of the most deeply rooted myths in gastronomic literature. However, many historians claim that this story could be wrong. It is known that the Greeks, Romans and Arabs already knew a type of pasta, similar to spaghetti, even before our era. On the other hand, the Chinese are said to have already made pasta 2,000 years earlier than the Italians. The truth is that achieving the fine strands of noodles and spaghetti required powerful presses and extrusion machines, which were not invented until the middle of the 19th century. Apparently the origin of the pasta could have been "simultaneous" in different places and civilizations.

Beer
The origins of beer date back more than 4,000 years; its use was reported by the Sumerians who took this drink, and called it sikaru. Undoubtedly, they transmitted this custom to the ancient Egypt, where its consumption was the exclusive monopoly of the State. Up to 19 varieties of beer are listed in medical papyri, and the detailed process of their manufacture has been found in Egyptian tombs. Other cultures and civilizations made beer from rice, millet, corn, ginger, sorghum and cassava, while in Europe barley was retained as the base ingredient.

Cheeses
The origin of the cheese is attributed since the domestication of cattle some ten thousand years ago. It is believed that the milk preserved in skin or stone containers was acidified and when the whey was released, a paste remained that when curdled opened the way to this food. In writings of the Sumerians, around 3000 before our era, about 20 soft cheeses were pointed out. Homer quotes in his Odyssey that when Ulysses and his followers hid in the cave of the Cyclops Polyphemus, they saw that he milked his sheep and prepared a kind of cheese, from the curdled milk.

Salt
It has a long history, since it has been shown that the first human settlements occurred in places where there was water and this product. It is also known that in the early years of Rome, each soldier received his salary daily in salt, which gave rise to the term of salary. Ancient cooks started the habit of mixing salt with other spices, such as pepper, ginger, cumin, celery, saffron, parsley, and dill; and nowadays some foods like fish are cooked in the oven, wrapped in a thick crust of salt.
